Ingredients
- 1 Pound GROUND TURKEY
- 2 14-Oz. Cans whole peeled tomatoes, drained
- 2 14-Oz. Cans kidney beans, drained and rinsed
- 1 14-Oz. Can black beans, drained and rinsed
- 1 12-Oz. Can tomato sauce
- 1 Cup finely chopped celery
- 1 Cup finely chopped carrot
- 1 Cup finely chopped onion
- 3 Tablespoons chili powder
- 4 Teaspoons ground cumin
- 2 Teaspoons ground red pepper
- 1 Teaspoon salt
- 1/2 Cup Amaretto
- 1/2 Cup Monterey Jack cheese, shredded
Instructions
- Cook ground turkey in a heavy skillet over medium heat until the pink color disappears.
- Place cooked ground turkey and all other ingredients, EXCEPT cheese in a slow cooker. Mix well and cook on HIGH for 7 hours.
- For a thicker sauce, remove the cover for the last hour.
- Garnish with cheese.
